Quarantine Kitchen: Strawberry Cheesecake Tacos

So, life has been a bit of an adjustment to say the least. Hubby and I are both working from home so we spend a lot of time in front of a computer and tablet. Teleworking is something that I definitely gained a lot of respect for. Those of you who do this under normal circumstances...kudos to you! Y'all are the real MVPs!


I've been posting our meals and baking adventures on Instagram and it's been so fun interacting with you guys with recipe suggestions and tips and tricks when cooking and baking from a home chef like me!


Lately, I made some Strawberry Cheesecake Tacos that were of epic proportions! One of my sorors suggested I try it and I'm so glad I did. These things are dangerously addictive.



This version was adapted from Twisted Food -- only difference, I decided to fry my taco shells in oil to give it that chalupa type of crunch. They fry up quickly so you have to pay close attention! Right after you remove them from the oil, dust them with a little cinnamon sugar or finely ground graham cracker crumbs and let them drain a bit on a paper towel. I even opted to add the graham cracker crumbs to the top of the tacos for a little extra decoration. But this recipe is spot on and delicious! Go try this soon! It's not too sweet or too rich. This would be a perfect dessert taco for Taco Tuesday or Cinco de Mayo!
